Many of the faerun deities were removed from the list apparently. You can always pick something close and say you follow him.

As DigitalDragoon said, a lot of Faerun deities got removed to make room for more planescape orientated deities and generally larger spectrum of choices. And yes, you can just pick a deity and roleplay worshipping another one without repercussions. Although might want to keep alignment within the acceptable limits.
And if you wonder why Kelemvor didn't make it, they aren't particularly important in multiversal scales, Wall of Faithless isn't a thing in the planes, just in Abeir Toril. Souls of faithless in the multiverse generally go to the planes of fitting alignment.

Is there a limit to the number of deities you can add to the list? I was originally a bit disappointed to find that Mask had been removed. But I like Sung Chang as a replacement. He was pretty cool in the Blood Wars Trilogy novel...pulling the fiends right out of the tapestry. :)

Interesting tidbit... when we first made SCoD, although I'm a huge planescape fan I hadn't read that series yet, and so Sung Chang was left out when I added deities from various pantheons.
